Since the 1980s, when the Languedoc dropped its quest to produce quantity and followed the path of quality, there has been an ever increasing collection of outstanding wines from this region. Not only are there the appellation controlee areas such as Corbieres, Minervois, Saint-Chinian, Faugeres and the Coteaux du Languedoc, which year on year seem to take the standard of their wines a notch higher, but there are also the many vin de pays wines. These can range from simple, easy and everyday to outstanding and perhaps even better than the AOC equivalent. Philippe Mercadier's small cellar lies in the north of Corbieres and has been in the same 'clan' for the last two centuries. His winemaking skills have in the past earned him a Gold at the prestigious International WINE Challenge. However, Philippe finally decided that he wanted to make his mark in the Languedoc and devotes the majority of his time there. The Mercadier estate produces largely AOC Corbieres, but Philippe also has a soft spot for Chardonnay. The hot, dry climate of the area works well with this grape, but French appellation rules dictate that the wine must be labelled vin de pays to protect the integrity of the Corbieres name.
